Ingredients
1 cup water
1 cup sugar
8 sprigs of fresh thyme
1 cup sugar
8 sprigs of fresh thyme
(we use Australian native Thyme aka. Cut-leaf Mint / Prostanthera incisa)
Method
In a small pan, bring the sugar and water to a simmer, stirring until all the sugar dissolved. Remove from heat, add thyme sprigs, cover and steep until the syrup is cool.
Strain and store in a glass bottle in the fridge.
